The Planning and Transportation Commission on Monday gave the green light to Rubio’s Restaurants, Inc. to sell beer and wine – clearing the way for the establishment of a Rubio’s Fresh Mexican Grill at a future commercial center under construction at the corner of Alicia Parkway and Via Fabricante. The site formerly housed the Weber Bakery building.
The 2,500-square-foot restaurant, which will boast a 550-square-foot patio, will operate from 10 a.m. to 11 p.m. daily. It joins two other Rubio’s eateries – 25482 Marguerite Pkwy and The Shops at Mission Viejo – in town.
When the commercial center renovation is complete, the commercial retail building will total 11,500 square feet and will include a 60-stall parking lot.
